Pudla Sandwich

When everyday feels like a Sunday and I can treat myself to a leisurely breakfast of Pudla Sandwich made with moong dal batter, (even on a Monday).
Relaxing under the balmy Sun, breeze blowing away carefully marked page of my novel, birds cuckooing a soft symphony in the background and with half closed eyes I sip my tea as if there exists not a single worry in the world - I should know, it’s time to thank the little blessings, lockdown brings my way, everyday!

Prep time: 15 mins
Cooking time: 15 mins
Serves: 4

Ingredients:
Cabbage 1 cup (shredded)
Capsicum ½ cup (julienned)
Tomatoes ½ cup
Onions ½ cup (sliced)
Beetroot ½ cup (grated)
Green chilies 1 tbsp (chopped)
Besan (gram flour) 1.5 cup or
Moong Dal Batter 2 cup
Coriander powder 1 tsp
Kashmiri red chili powder 1 tsp
Turmeric powder ½ tsp
Ajwain 1 tsp
Salt to taste (preferably pink himalayan)
Bread slices as required
Oil/ghee as required
Chaat masala to taste
Processed cheese as required (optional)

Method:
In a mixing bowl add the veggies, mix well and set aside.
In a separate bowl add besan, coriander powder, red chilli powder, turmeric powder, ajwain and salt to taste, mix well and add water to make a semi thick batter. Rest it for 15 minutes. (Likewise you can make moong dal batter with moong dal soaked for 4-5 hours and grinded to a smooth paste)
Set a pan on medium heat and heat oil/ghee.
Take 2 bread slices, dip and lightly coat with batter from all sides and place on the pan.
Meanwhile add the freshly made veggie mixture on both the slices and sprinkle some chaat masala & red chilli powder on it.
Slightly press the veggie mixture and let the bread cook from one side for 1-2 minutes keeping the flame on medium heat.
Flip and cook on other side and cook further for 2-3 minutes keeping the flame on medium heat.
To further enhance the flavour, you can grate some processed cheese on one of the slice.
Place the other slice of bread on top, facing the mixture side in and press gently so that the two slices stick together like a sandwich.
The Pudla Sandwich is ready.
Cut into triangles and serve hot with any dip of your choice.
