Nawabi Celebrations During Lockdown

(spl inclusion: a candid video on how to make flaky lachcha paranthas at home, deploying a simple trick!)

Special occasions deserve special celebrations, whether it’s a major milestone or a personal achievement. Today happens to be really special for us, and it deserves to be celebrated in style!

My daughter has released her second video during this lockdown! Right from taking the bold decision to swim with wild sharks in open waters, to planning her trip, conceptualizing her story, writing the content, studying on the island to clear the practical skill tests (almost 30 in all) with an astounding 92%, to get not just a PADI open-water diving certificate but walking the extra mile to clear even the advance one, going for night dives just after her fourth or fifth dive, swimming with wild sharks & sea snakes, living on a remote island with bare basics (I remember the day she got back to the hotel in Cebu, a mirror and AC seemed like a luxury to her), looking for a videographer who could shoot her underwater, doing her on land filming; and it didn't quite all end there! Rather the real work started after she returned. She kept herself in isolation for our safety, reviewed the entire footage and set on the mammoth task of piecing it all together - editing visual effects, music, sound design, she accomplished it all entirely on her own!! My warrior princess, (an endearment, I love to address her with) single-handedly, has processed and released two videos during this lockdown!

I urge you to watch this beautiful piece, not because my daughter has created it but because it comes as a ‘Shining Ray of Hope’ during these tumultuous times when everything is seeming bleak and uncertain. I promise, the end will leave you all emotional yet hopeful with a solid dose of positivity, that we all are craving for at the moment. 😊

This island really has the friendliest people!

A significant goal accomplished; it's time to celebrate my daughter's win but - agh - we're still socially distancing! Not wasting myself to even a single hot second of feeling feel blue, I won't allow the lockdown to play a dampener to our spirits. Going to make my Lil one feel special and indulged, right here, at home, with 'just the right ingredients' - some soulful Sufi music, great conversation, a special candle-lit spread, and my daughter’s favorite red wine!! So what should I put on today's menu? Ummmmm, has to be family's favorite...

Hyderabadi Chicken Korma
Khada Paneer Masala
Dal Peshawari
Dahi Bhalla Lahori
Punjabi Lachchhedar Parantha
Bengali Sponge Rasgulla (delicacy by my friend)

I see many of my friends struggling to get 'the perfect' lachchas in their paranthas. I also hear people saying that getting the layers in lachchha parantha is an epitome of culinary art that comes with years of practice. So I thought, why not bring this art to everyone’s plate! Watch a fairly simple technique that you must have mastered in your kindergarten, to make this multi-layered speciality of Punjab. Yes, you read it right, it’s as simple as a child’s play!!! Don’t believe me!! Watch for yourself :

Now making the flakiest lachcha parantha will be a child’s play!!!
